The roots of soul food

What we now refer to as “soul food” has its roots in African staples, merged with the inexpensive foods that were available to African American slaves.

After the abolition of slavery, many African Americans continued to make creative use of these more affordable ingredients. Nowadays, black cuisine includes everything from healthy African-influenced classics to food influences from other cultures.

In celebration of Black History Month, here are several recipes from well-known local chefs that showcase the African diaspora’s culture through food.
